Serves 4 Ingredients: 100g almonds, chopped 100g walnuts, chopped 100g Emmenthal or Gruyère cheese, torn into small pieces 1 large head of lettuce, washed and chopped 1 apple, peeled, cored and diced into small pieces 1 tbsp of reduced-calorie mayonnaise Salt and pepper 1 tbsp of olive oil Juice of 1/2 lemon
I first had this sandwich at the Ambassador Hotel in Bombay and have never forgotten how good it tasted. This is definitely one of the best sandwiches around. It is now sold in shops and supermarkets all over Bombay and, indeed, London but it won't be as good as this home-made version, especially when you know exactly what is going in it.
In true perfect housewife fashion, Anthea likes to use up the left-overs from the weekend and lists her favourite lunchtime sandwich as a Chicken Wrap with Salsa, Guacamole and Sour Cream. “I use up the roast chicken from the Sunday lunch and then add some fresh dips to it to create this delicious and nutritious wrap. And then I can use the rest of the dips for when my friends come round.”
